Stay cool this summer with my favorite summer recipe – Chilled Avocado Cucumber Mint Soup!
I practice and incorporate principles of traditional Indian medicine, called Ayurveda, in my personal life and program offerings.
According to Ayurveda, like increases like and opposites create balance.
With summer here (pitta season), eat cooling foods to balance the heat.
Perfect cooling foods include summer seasonal foods like melons, cucumbers, artichokes, zucchini, mango, and mint.
Summer is high time for heat imbalances to show up like inflammation, acid reflux, anger, irritability, ulcers, and eczema.
Try this delicious cooling AVOCADO CUCUMBER MINT SOUP to reduce the heat in your body, mind, and spirit.
Serves one.
- 1 ripe organic avocado (cool in fridge in advance)
- 1/2 large peeled and grated organic cucumber (cool in advance)
- juice of one fresh lime
- 12 fresh mint leaves
- 1/4 cup refrigerated coconut water
- himalayan salt to taste
In tall mixing cup, put in flesh of avocado, grated cucumber, lime juice, mint leaves, and coconut water.
Blend until smooth with hand blender. Add salt to taste.
If your soup needs more liquid, add more coconut water.
Pour contents in your favorite bowl and enjoy – delicious!
